Chicken strips, peppers and onions roast together with cumin and paprika for a flexible fajita filling. This version is written for two people, with ingredient quantities that you can scale using the recipe card. Read the whole method before heating your pan so you can prepare the ingredients in the order they are used. Cooking times are estimates and should be checked against the doneness cues in the instructions.

What makes this dinner work

A wide pan lets the filling roast instead of steam. If the chicken and vegetables release a lot of liquid, keep them spread out rather than adding extra oil.

Thin strips of similar size help the chicken and peppers finish close together. The chicken temperature, not the amount of charring on the peppers, determines when the filling is ready.

Before you start

The base recipe includes four small tortillas for two people. Choose flour or corn tortillas according to your preferences and check their labels.

Measure the sauce ingredients and prepare the vegetables before handling any raw meat or seafood. Keep the ingredient list beside you: changes in thickness, pan size and stove output can affect the cooking time. When multiplying servings, a second pan or separate batches may work better than crowding everything into the original pan.

Cooking and handling notes

Check the thickest pieces with a food thermometer: chicken must reach 165°F (74°C). Check more than one piece when sizes differ; timing alone does not confirm doneness.

The CDC guidance linked below covers keeping hands and surfaces clean, separating raw foods and refrigerating perishable food promptly. Check ingredient labels for allergies, including wheat, dairy, eggs, soy, peanuts and seafood where relevant.

How to make it

  1. Heat the ovenHeat the oven to 425°F (220°C). Set out a rimmed sheet pan. Slice peppers and onion into similar-sized strips, keeping the raw chicken on a separate board.
  2. SeasonMix oil, cumin, paprika, garlic powder and salt in a large bowl. Add chicken, peppers and onion and toss with utensils until lightly coated. Wash hands and clean surfaces after handling raw chicken.
  3. Spread in one layerSpread the mixture on the sheet pan with a little space between pieces. Use a second pan for a larger batch rather than piling the ingredients up.
  4. Roast and checkRoast for about 18–25 minutes, turning the ingredients halfway through. Check several thick chicken strips with a thermometer; they must reach 165°F (74°C). Continue cooking if needed.
  5. Fill and serveWarm the tortillas according to their package. Divide the cooked filling among them and finish with lime. Do not reuse utensils or bowls that held raw chicken unless washed.
